A comforting and easy-to-make crockpot meal featuring lean ground beef, rotini pasta, taco seasoning, and a creamy cheese sauce, designed for convenience and good macros.
1. Quickly brown ground beef in a skillet with garlic, salt, and pepper. (If you want zero prep, skip this and dump raw meat in the crockpot.)
2. Add meat, Rotel tomatoes, taco seasoning, broth, corn, and black beans to the crockpot.
3. Cook on LOW 5–6 hrs or HIGH 2–3 hrs.
4. About 15–20 min before serving, stir in uncooked protein pasta. Cover and cook until pasta is al dente, stirring occasionally.
5. Turn crockpot to LOW/WARM. Stir in shredded cheddar and Greek yogurt until creamy.
Prior to freezing, make sure recipe cools fully to avoid sogginess on reheating.
