A convenient recipe for making ham, egg, and cheese breakfast sandwiches using frozen biscuits and a baked egg patty, perfect for meal prepping and freezing for later.
Bake the Eggs:
1. Preheat oven to 325°F.
2. Line an 8x8 inch pan with spray oil.
3. Whisk together 3 whole eggs, 1½ cups liquid egg whites, ⅛ tsp salt, and ⅛ tsp black pepper.
4. Pour the egg mixture into the prepared pan and bake for 18–22 minutes, until just set (the center should be firm but not dry).
5. Cool completely then cut the baked egg patty into 6 equal pieces.
Bake Biscuits:
1. Preheat oven to 400°F.
2. Place frozen biscuits on a baking sheet and bake for 18–20 minutes, until golden brown.
3. Briefly sear ham slices in a dry skillet for 1–2 minutes per side to reduce moisture (optional).
4. Take the biscuits out, cool them slightly, then split them in half to form the sandwich.
Assembly and Storage:
1. Assemble each sandwich with a biscuit half, a slice of cheese, a slice of ham, and a piece of the baked egg, then top with the other biscuit half.
2. Wrap each sandwich in oven-safe parchment paper.
3. Optionally, place the wrapped sandwiches in a freezer bag and freeze for later.
To reheat:
* Keep parchment paper on.
* Microwave for 1:30–2:00 minutes.
* For extra crispiness, air fry at 400°F for 2-3 minutes prior to eating.
