HOT HONEY BUFFALO CHICKEN SANDWICH

1. Marinate the chicken: In a bowl, combine 2 tbsp Greek yogurt, 1 tbsp pickle juice, ¼ tsp garlic powder, ¼ tsp paprika, salt, and pepper. Add 7 oz of chicken and marinate for at least 30 minutes, or ideally overnight.
2. Prepare the breading: In a separate bowl, mix ⅓ cup panko, 3 tbsp grated parmesan, ¼ tsp garlic, ¼ tsp paprika, salt, and pepper.
3. Bread and cook the chicken: Coat the marinated chicken with the breading mixture. Spray with oil and air fry at 400°F (200°C) for 8 minutes per side, or until cooked through and crispy.
4. Make the hot honey buffalo sauce: In a pan, melt 1 tbsp light butter with 3 tbsp buffalo sauce and 1 tbsp honey until smooth and warm. Once the chicken is cooked, coat it evenly with the hot honey buffalo sauce.
5. Assemble the sandwich: On a toasted brioche bun, layer pickles, high-protein ranch (recipe from author's page), and the crispy hot honey buffalo chicken.
