A quick and easy sheet pan recipe for breakfast burritos, featuring eggs, ground beef, bacon, vegetables, and cheese, all baked together and served in a low-cal tortilla with honey chipotle sauce.
Preheat oven to 350°F. Into a bowl, add 6 eggs, 3/4 cup eggwhites, 1/4 cup milk, salt, and pepper. Whisk thoroughly. Pour the egg mixture into a sheet pan. Add red onions, bell peppers, 6oz 93/7 ground beef, 8 slices bacon, and 1/2 cup fat reduced cheddar cheese over the egg mixture in the pan. Bake for 15-20 minutes at 350°F, or until the eggs are set. Once baked, grab a low cal tortilla, add your honey chipotle sauce (recipe pinned separately), and roll up the egg mixture into a burrito.
To reheat: Wrap a burrito in a damp paper towel, and microwave for 2-3 minutes. Then, add it to a medium heat skillet with light oil and toast until desired crispness.
